PASTA Provencal Cooking for 1 or 2  50355

   -----For 1-----

   2 oz. uncooked pasta

   1 tbs. olive oil

   1 cup chopped tomatoes

   1 garlic clove, minced

   2 tbs. chopped Nicoise olives

   1 tbs. capers

   salt and pepper

   -----For 2-----

   4 oz. uncooked pasta

   2 tbs. olive oil

   2 cups chopped tomatoes

   2 garlic clove, minced

   1/4 cup chopped Nicoise olives

   2 tbs. capers

   salt and pepper

 

   Cook pasta as directed. While pasta cooks, heat olive oil in a saucepan. Add tomatoes,

   garlic, olives and capers. Simmer for 10 to 15 minutes. Toss pasta with sauce and season

   with salt and pepper. Serve hot.
